Nougat - a totally different type of nougat which contains only sugar, cocoa
butter, hazelnuts and/or almonds and cocoa mass
Known by Germans as "Schmelz-Schokolade" (molten chocolate, because of its mellow consistency), and elsewhere as praline paste, these versatile products can be either used neat (cut or melted and then piped) or mixed with other ingredients to make centres for truffles or to give desserts a smooth nut flavour.
Again there is a wide range of products—varied by nut, either hazelnut or almond, dark or light roasted , the amount of chocolate or cocoa butter included and also whether cream is added.
The combination of cocoa butter with finely ground nuts gives a smooth mouth feel and a delicious flavour, adding a dimension to whatever product they are used in
Also included in the standard range are dietetic nougats (with fructose), organic nougats (both almond and hazelnut) and creams which are fluid.
