Started over 100 years ago, Lubeca have a vast experience of manufacturing marzipan. Using traditional techniques in their modern factory near Hamburg enables them to offer an impressive range of marzipans.

All the products are packed in bulk, for use by food manufacturers.

Using high quality raw materials, production of marzipan starts with coarse crushing the carefully selected almonds between granite rollers. The almond pieces are then mixed with sugar before being finely crushed between granite rollers. This gives the almond particles a uniform size and the marzipan its unique texture. The sugar and almond paste then goes into open copper roasting pans, giving Lubeca marzipan its delicious taste.

The range starts with a most exotic, traditional marzipan, made with an extraordinarily high almond content according to a 100 year old recipe. Only almonds from the Bari region of Italy are used, sugar (circa 30%) and a hint of rose oil.

Rawmasses have slightly more sugar (35% sugar). Their flavour is varied by the blending of sweet Californian almonds and stronger flavoured Mediterranean almonds . Bitter almonds can be further added to produce a stronger flavour.

Marzipan is the next in this range of almond pastes. The flavour of marzipans is further varied by increasing the sugar content. Depending on the application and the taste required, the sugar content for marzipan can range from 40% to 67%.

Lubeca also make special nut pastes—persipan (apricot kernel paste), hazelnut paste (35% sugar), dietetic almond pastes (with fructose and or maltitol), and organic marzipans (either with honey or unrefined cane sugar)
