Couverture — a chocolate that contains at least 32% cocoa butter

Lubeca produce a wide range of chocolate couvertures suitable for a large variety of applications.

Lubeca’s standard dark chocolates start with a cocoa solids content of 60%, and are made from cocoa beans from either the Ivory Coast or Ghana. The highest cocoa content they produce is an 85% Ghana, which whilst having a good rounded chocolate flavour is very mellow. The next grade in the dark chocolate couvertures are made from a blend of high quality cocoa beans from the varieties Arriba, Trinidad and Venezuela.

Arriba 63%, made from Arriba cocoa beans selected from the highlands of Ecuador

Rio Caribe 67%, made from the fruity Rio Caribe variety of Venezuelan cocoa beans

Trinidad 72%, made from cocoa beans from Trinidad

Other chocolates available from Lubeca are white chocolate (39.5% total fat), dietetic chocolates (made with fructose).

Organic chocolate couvertures, (dark, milk and white) made using cocoa beans from the Dominican Republic and Peru. All ingredients are organic.
